Honey Cake Recipe

Honey is so versatile you can simply replace, or part replace, the sugar in most recipes for honey. You often need less honey than you do sugar too.


Try this quick, easy and so delicious honey cake, we guarantee you will love it.


Honey Cake

150g butter

115g dark or light brown sugar

200g honey

1 tbsp milk

2 free range eggs

200g self raising flour

Flaked almonds to decorate (optional)

 

Put butter, sugar, honey and milk in a pan and stir over low heat until melted.  Leave to cool slightly then beat the eggs into mixture one at a time, add the flour and stir well until completely mixed. 

 

Pour the mixture into lined rectangular tin 11” x 7”.  Bake for 30 - 40 mins until well risen and mixture has shrunk back from sides of tin gas 4, 180°C. Once cooked you can glaze with warm honey and top with almonds if you are using them.  Leave to cool and remove paper - cut into yummy pieces!  This cakes keeps really well too - although not for long in my house!
